Tonight, I took a page out of my friend, Nicolette’s book. She shared a picture of the most amazing looking banana muffins she made. And she added yogurt to the mix. I happened to have some very ripe bananas laying around and I so hate to waste food, so I decided to jazz up a basic banana muffin recipe, I’ve used before.
I used whole wheat flour, instead of white flour and Domino Light sugar and stevia blend, instead of regular white sugar. I jazzed up the recipe by adding a scant cup of Müller vanilla yogurt and one cup of Hershey’s Dark chocolate chip cookies. And oh my, did these muffins come out just delicious. They are so light and fluffy and moist and the chocolate chips are all melty and add just a little extra. My new favorite recipe. And they are kind off healthy, right?
