Hubby doesn’t have much of a sweet tooth but he loves oatmeal cookies and has been asking for a while if I could make some. A few weeks ago the big tins of oatmeal were on sale at Publix and I grabbed one. Plenty of oats for a few batches of oatmeal cookies.
None of us like raisins, so I made the cookies without them. Next batch, I’m adding some chocolate chips! I love how simple and quick this recipe is.
1/2 cup plus 6 tablespoons butter, softened
3/4 cup firmly packed brown sugar
1/2 cup sugar
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
3 cups Quaker oats
Heat oven to 350º F. In a large bowl beat butter and sugar on medium speed of electric mixer until creamy.
Add eggs and vanilla, beat well. Add mixture of flour, baking soda, cinnamon, salt, mix well. Add the oats and mix well again.
Drop dough by rounded spoon fools onto ungreased cookie sheets.
Bake 8-10 minutes until a light golden brown. Cool completely. Enjoy!!!
(Note: I substituted whole wheat flour for the regular flour and Domino Light sugar-stevia blend for the sugar. The cookies came out just as great.)
