Many of you know, that I am on a mission to bake any and all desserts from scratch, trying to use ‘better for us’ ingredients.
But sometimes an exception has to be made, especially when we get ready to celebrate something as special as a our middle daughter’s 10th birthday.
Can you believe it? Now, two of my kids will be in the double-digits. How did that happen?
The kids usually get to decide what type of cake they get to have on their special day. The boy always asks for chocolate, the more, the better. I think, he would really love this Malt Shoppe Memories Cookie Ice Cream Cake.
The girls on the other hand prefer vanilla or yellow cake with lots of colored frosting.
This is the cake I made for little one’s birthday last September because she insisted on a layered vanilla cake with pink frosting and sprinkles. I like to bake birthday cakes myself because there are usually less left-overs and it seems the kids prefer it when I make the cakes. It’s just more personal, you know?
A few years ago, I got into the habit of making cupcakes and after I found this cool cupcake tower, I never looked back.
It’s just so much easier to deal with and each child gets the same thing. No fighting over the size of each piece of cake or the amount of frosting on the pieces. I love that I can change up the look of the cupcakes with different paper liners and color the frosting accordingly.
However as you might imagine, almost 10 year-old’s have their own ideas and want something more exciting than a layered cake or a cupcake tower. That’s where Betty Crocker comes in with some super cool summer cake ideas.

I love the fact that you can customize first the cake batter, if you so choose and then the frosting and toppings.
I think, it would be kind of fun to bake the cupcakes and then put out a few bowls of different colored frosting, topping and so on and then let the party guest decorate their “ice cream cone” the way they want to.

Seeing all these ideas really make my baker’s heart flutter. I love to try new things and I love decorating cakes.
